POSITION:                            Lead Cook (AM/PM Shift) – 2 Positions Available

REPORTS TO:                        Head Chef

STATUS:                                 Seasonal, Full-Time, Non-Exempt

                                                Will be needed roughly between Saturday, 4/15/23-Wednesday, 8/30/23

JOB CLASSIFICATION:       Associate III

WORK ARRANGEMENT:      In Person, EHC

SALARY RANGE:                   $22.40-$25.60/hr

JOB PURPOSE:

LightHouse for the Blind and Visually Impaired is looking for a Lead Cook to join Enchanted Hills Camp. This position will a key, full-time, seasonal staff position at Enchanted Hills Camp in Napa, CA. Our culinary teams knows that food is much more than fuel for busy campers. Food brings people together and is as much a part of the camp tradition as the songs we sing around the campfire. As the Lead Cook, you will work closely with the Head Chef to ensure that our offerings and service is fun, creative, and delicious!

There will be a shuttle service to transport employees up to camp, from the park-n-ride in Downtown Napa.

QUALIFICATIONS:

  • Formal culinary training preferred; current students encouraged to apply
  • 2-3 years’ progressive culinary experience required
  • Previous experience leading a team in a busy atmosphere required
  • Advanced knowledge of the principles and practices within the food profession
  • Valid CA food handlers permit
  • Ability to follow directions and willingness to ask clarifying questions
  • Communicate with co-workers and other departments with professionalism and respect
  • Candidate must be willing to be willing to work hours that include evenings and weekends
  • Maturity of judgment and behavior
  • Good attention to detail
  • Ability to communicate in written and spoken English required
  • Maintain high standards for work areas and personal hygiene
  • Must comply with dress code requirements
  • Employment is subject to satisfactory background check

PHYSICAL REQUIREMENTS:

  • Capable of significant walking over uneven terrain
  • Ability to work in a standing position for long periods of time (up to 8 hours)
  • Frequently lift up to 50 pounds and occasionally team lift/move 50 pounds
  • Manage physical activities such as standing, some bending, stooping, and stretching as well as daily exposure to the sun and heat and varying environmental conditions
  • Ability to safely work with sensitive materials and/or chemicals

JOB ACCOUNTABILITIES:

  • Responsible for ensuring all kitchen staff is on task, food quality control, food storge, kitchen cleanliness, and completion of all logs, in the absence of Head Chef.
  • Ensure consistency and superiority in food preparation, quality, and service
  • Knowledgeable in safe food handling practices and proper operation of kitchen equipment
  • Oversee kitchen operations, as shift lead, in the absence of the Head Chef
  • Sets an example for kitchen staff by following all company and department policies and procedures for safety, hygiene and performance
  • Ensure all position checklists are completed daily and accurately
  • Conduct line checks multiple times per shift to ensure DOH compliance; Address all variances immediately
  • Maintain cleanliness, organization and stocking of coolers and storage areas
  • Label, date, and wrap food products, follow protocol to document food waste
  • Assists Head Chef in maintaining accurate inventories of ingredients, supplies and equipment
  • Take proper care of ranges, ovens, broilers, fryers, griddles, utensils, and other equipment
  • Delegates and participates in opening, closing and side work duties as instructed and according to proper guidelines.
  • Communicate with Chef for any special instructions and training
  • Pro-actively create a welcoming environment for guests and employees alike
