GENERAL DESCRIPTION:                                   

The Head Chef is a key, full-time staff position at LightHouse for the Blind and Visually Impaired (LightHouse) in Napa, Ca. The Head Chef reports to the Director of Hospitality and has responsibility for creating and leading the smooth, efficient, and profitable operation of all culinary services for Enchanted Hills Camp and Retreat Center.

QUALIFICATIONS:

  • High School Diploma or GED
  • Formal culinary training preferred
  • Blind/Visually Impaired strongly encourage to apply

EXPERIENCE:

  • A minimum of 5 years of progressive experience cooking and preparing food in a commercial kitchen.
  • At least 3 years of kitchen management/leadership experience strongly preferred.

PHYSICAL REQUIREMENTS:

  • Ability to work in a standing position for long periods of time (up to 8 hours).
  • Frequently lift to 40 pounds and occasionally the team lift/move 50 pounds.
  • Manage physical activities such as standing, bending, stooping, and stretching as well as daily exposure to varying environmental conditions.

JOB ACCOUNTABILITIES:

  • Set excellent customer service and professional work examples for all staff by promoting, practicing, and supporting LIGHTHOUSE FOR THE BLIND AND VISUALLY IMPAIRED’s Company-wide culture and always demonstrating Enchanted Hills Camp and Retreat’s Service Standards.
  • Ability to read, write, speak, and understand the English language. Bilingual English/Spanish speakers strongly preferred.
  • Document formal standard operating procedures, which comply with regulatory health and safety requirements, for all aspects of operations within the culinary department.
  • Collaborate with the Director of Hospitality to develop a variety of menus and product offerings to accommodate diverse guest groups participating in summer camp, corporate retreats, and special events.
  • Create and maintain current and accurate recipe files for all menu items. Take responsibility for proper food costing, portion control and controlling all write offs.
  • Regularly evaluate and compare vendors; order and monitor all culinary ingredient items with the goal of minimizing costs without sacrificing quality and efficiency.
  • Train and supervise staff to ensure the proper care, handling, and storage of all dry, fresh, frozen, and prepared food products in accordance with established health and safety requirements.
  • Prepare staff schedules and supervise daily kitchen operations. Distribute workload, prepare prep lists, project lists and break/meal schedules.
  • Participate in recruiting, interviewing, hiring, and on-boarding staff members within the culinary department.
  • Execute progressive and on-going employee training; Emphasize professional food standards, demonstrate proper cooking techniques and use of kitchen equipment, with attention to quality, consistency, and detail.
  • Pro-actively seek new ideas for business growth and convey culinary ideas and suggestions to management.
  • Organize and participate in all physical inventory, inventory follow-up and resolution of inventory variances.
  • Develop and maintain schedule of cleaning and preventative maintenance for all kitchen equipment.
